Mediterranean Pasta Salad

Ingredients for 4 people
| 500 g | Gemelli pasta |
| 1 | jar of pickled, dried tomatoes |
| 1 tbsp | salt |
| 2 | splashes of rosé balsamic vinegar |
| 50 g | pine nuts |
| 100 g | arugula |
| balsamic cream for garnish |

Fresh, light, and full of Mediterranean flavours. This pasta salad brings a taste of the holiday to your table and is perfect for relaxed barbecues, picnics, or everyday meals. Easy to make and always a favourite.


Preparation
- Cook the pasta in plenty of salted water until al dente. Drain, allow the steam to escape, and leave to cool completely.
- Place the sun-dried tomatoes in a sieve, collecting the oil. Cut the tomatoes into strips or pieces, depending on their size, and add them to the pasta.
- Add about 30 ml of the reserved tomato oil and 1 tsp of salt to the pasta and mix thoroughly so that the flavour is evenly distributed.
- Toast the pine nuts in a non-stick pan without any additional oil until golden brown. Then mix about two thirds of the pine nuts into the pasta salad.
- Wash the rocket, spin it dry, and roughly tear it into pieces. Carefully fold it into the pasta salad.
- Arrange the pasta salad on plates or in a bowl, drizzle with balsamic glaze, and garnish with the remaining pine nuts.
- Taste again before serving and season to taste if needed.
