Creamy Leek and Minced Beef Soup

Ingredients for 4 people

small leeks
1 onion
1 tbsp oil
250 g mixed ground meat
  salt, pepper, paprika powder
1,5 L broth
150 g crème fraîche
200 g plain cream cheese (double-cream variety)
200 gspreadable cheese / spreadable cream

Sometimes, you just need exactly this: a warm, creamy dish that instantly puts you in a good mood. This creamy leek and minced beef soup is the ultimate comfort food – quick to make, uncomplicated, and simply delicious. Perfect for days when you’re short on time but still want something hearty on your plate.

Preparation

  1. First, wash the leek thoroughly (there is often still some sand hidden between the layers). Then cut it into thin rings. Peel the onion and cut it into small cubes.
  2. Heat the oil in a large pot and sauté the diced onion over medium heat until translucent. Then add the minced beef and fry until nicely browned, breaking it up as it cooks. This creates the roasted flavours that are essential for the taste later on.
  3. Add the sliced leek and sauté briefly. Season everything with salt, pepper, and a little paprika.
  4. Pour in the stock and bring the soup to a boil. Then reduce the heat.
  5. Now for the creamy part: gradually stir in the crème fraîche, cream cheese, and spreadable cheese until everything has completely melted and the soup has a smooth, creamy consistency.
  6. Let the soup simmer gently over low heat for a few more minutes. Taste again before serving and season to taste if needed.

Tips: The soup tastes best served fresh and hot – ideally with crispy baguette or fresh bread. If you prefer a spicier flavour, add a pinch of chilli or a little nutmeg.
