Quick apple pie with sunken apples

This recipe will sweeten the farewell to the summer.
Preparation: approx. 10 minutes, baking time: approx. 40 minutes


  • 4 apples (Boskoop)
  • 150 g room-temperature butter
  • 1 tbsp grated peel of an organic lemon
  • 1 packet of vanilla sugar
  • 175 g of sugar
  • 3 eggs
  • 250 g flour
  • 1 teaspoon baking powder



Peel, quarter and core the apples. Slightly cut in the arched side with a knife. Drizzle with lemon juice. Preheat the oven to 180 degrees (circulating air 160 degrees).

Beat butter, lemon zest as desired, vanilla sugar, and 150 g of sugar until creamy. Stir in the eggs into the mix one at a time. Mix in the flour and baking powder and fold in.
Put the dough in a greased springform pan (Ø 26 cm) and smooth it out. Press in the apples with the curvature slightly upwards. Sprinkle the remaining sugar over it.

Sprinkle the cake with icing sugar after baking and cooling.
